Right now we have our schedule setup from 8-5 monday through friday to go to the auto attendant when open, and a closed greeting after hours. Is there a way to make it so on saturday it will ring straight through to an extension between 9-12 and then give the closes greeting after those hours?

depending on which release you are running..........there is a way with 7.5

You can do this on firmware versions earlier than 7.5. You can "stack" schedules in call routes and can have multiple schedules operating concurrently.
Simply create a schedule for the Saturday 9-12 day-mode hours, then use an interim extension between your inbound lines and the AA. Set that interim extension to route to the destination extension during the day mode hours, and then ring the AA after hours.
